Rancho Largo produces pasture finished beef on 14,000 acres of southeast Colorado rangeland. We have worked over 25 years to develop grazing practices that drive ecological diversity in the soil and above. Our focus on ecological health was key to paying the mortgage in the commodity beef industry for twenty years. Recently we began offering custom beef on a wholesale and retail basis. Our Corriente- English cross cattle were developed to thrive in a tough arid environment. It turns out they also flesh well on grass and provide the highest quality steaks, likely due to the slow-twitch muscle character of the Corrientes. We are currently crossing those cattle on Wagyu bulls to develop more marbling.
